I wet brine all my wild birds before cooking them. Makes a big difference!

My father used to be an avid hunter, so in my childhood, I ate these guys a lot lol. But of course, though we didn't cook them as fancy as this- the taste was still pretty impressive. Pheasants are a top tier game.

We brine our birds and normally don’t keep the legs because they’re mostly tendons, but that looks great!
