In this video, I’ll show you how to make beef salami. You can find the ingredients in the video description or blog article.

🍽️ Ingredients:
Meat per kg
100% beef (min. 20 - 25 %fat) (1000 g)
or:
75% lean beef (750 g)
25% pork loin fat (250 g)

Spices per kg:
25.5 g salt
2.5 g Cure #1
3 g sugar mixture (dextrose / sugar)
2 g black pepper
1 g paprika
0.5 g mace
0.5 g allspice

My biggest challenge is how can I keep the sausage at the recommended temperature, I’m from a tropical country and it can get really hot here especially this time of the year. I’m think a wine cabinet might do the trick

This looks doable for the beginner! Thank you! Why cur#1 and not cure #2? I thought #1 is for
Rejects 0-30 days and #2 for 30+ days?

Thanks for your Video.
You need to coarsely grind the meat and fat. Then process below 5 degrees Celsius. This way the fat keeps its ball shape when cut.

U didnt give any amounts of spices and cure?? We are lost!! I have heard the best salami isnt ground, its cut in chunks with a knife!
