Sweet Spicy Butternut Squash & Chickpea Stew

Ingredients
* 1 butternut squash, skinned and sliced
* 1 large onion, chopped
* 6 cloves of garlic, minced
* 1 tbsp minced ginger
* 1 small serrano chili, seeds removed and chopped (omit if you can’t tolerate heat)
* 1/2 cup of water (plus more for simmering)
* 1 tbsp coriander powder
* 1 tsp turmeric powder
* 1 tsp paprika
* Pinch of salt
* Black pepper, to taste
* 2 tbsp date syrup
* 1 can chickpeas, drained and rinsed
* 2 cups Greek-style soy yogurt
* Dried mint, for garnish
* Pomegranate seeds, for garnish
* Olive oil spray

Bake squash at 375°F for 30 mins.
Sauté onion on low heat, slowly to caramelize, then add garlic, ginger, chili, spices and some water.
Mix in date syrup & water, simmer 15 mins until golden and caramelized.
Add baked squash, then chickpeas, simmer with 1/2 cup water for 15 mins.
Serve with yogurt, garnish with dried mint & pomegranate.
