See how the dosa-making experts at Umesh Refreshments make the famous masala dosa and pudi "chutney powder" masala dosa.

Indian dosa is a versatile and popular South Indian dish known for its thin, crispy texture and savoury flavour.

Made from a fermented batter of rice and black gram (urad dal), dosas are traditionally served hot, often accompanied by coconut chutney, sambar (a lentil-based vegetable stew), and sometimes other chutneys.

This iconic dish is enjoyed across India and globally, with variations that include fillings like spiced potatoes in the classic masala dosa, paneer, cheese, or even fusion ingredients.

The fermentation process enhances the nutritional value by increasing the bioavailability of vitamins and minerals. It imparts a unique tanginess to the batter, making dosa a beloved staple in South Indian cuisine and a favourite among food enthusiasts worldwide.

Location is Umesh Refreshments, Indira Nagar, Bengaluru, Karnataka, India.

Karl bhai, as an India-lover myself I am thoroughly bingeing and enjoying your channel, I don't know if you already made such a video but could you perhaps give tips for foreigners on how to work/be based in India? And how you got to be there "long-term"? It'd be really my dream to be able to spend time in India besides holidays but jobhunting has been tough. Thanks!

To call podi a spice mix or masala would be inaccurate. It is actually roasted lentils coarsely powdered with spices and sesame seeds so it is not pure spice but a little bit of protein.

Awesome. This kind of content is nostalgic for me, it makes me miss my days of going up and down India on the sleeper trains. In the south, a masala dosa and a cup of chai or coffee was my go-to breakfast. Absolutely wonderful. 🙏 🇮🇳 ❤️

As an Indian I can confirm that we find utensils hard to use. That is why we stick our hands into everything when we cook. My only surprise is that he didn´t fully stick his hand into the batter also.

I didn't get it, why all indian restaurant messed up food preparation using naked and filty hand.. Home cooking is different but if food is being prepared for customers then show some hygenic manners ..

Dosa is one of my favorite items to eat. I used to eat like 7-10 of these every morning in my teen age days when visiting Kerala in the summers. Dosa, Appam, Idli, etc. You are all going down!!! 😋Especially with Coconut chutney!

People talking about bare hands usage, let me show u some magic. Go to part where he sprinkles the podi. 1:06 and then keep watching till and pause at 1:30. Magic, the podi disappears on his fingers and its miraculously wet! Surprising right?
Now let me tell you the secret, its called washing between the cuts/editing. I hope a YouTuber hails soon who can feed your hygiene needs on a YouTube video where he shoes the cook washing his hands for 30 seconds with soap and water so that you sitting at home can find some other flaw in the video.

The best masala dosa I ever had was in UK & would knock the socks of those ones your showing. The ones I used to have had tons more potato filling inside & were absolutely delicious.
