It's not because of the pan is too hot. It's because you had added oil to a non-stick pan before pouring the batter. Oil or ghee should be added only above the dosa to make it crispy and flavourful. Always cook in a medium heat and you need to sprinkle some water on the pan before making a dosa and it will turn out perfectly.

Use a iron pan..it works without any oil..i make oil free dosas..no matter how hot it gets...splash some water make sure to put a lid to steam it in

First dosa is not because of too hot it's because of too oily always pure oil after pouring batter
If the dosa sticks to pan before pouring next batter add a drop of oil and wipe it off with a tissue or cloth
We will get perfect dosa 😊

Bro before putting dhosa you should use nonstick tawa and apply some oil and water and after getting some heat remove the oil and water with tissue or clothe and then apply dhosa it will work properly I recently had this problem and tried this method it worked for me 😅

Here is my mom's way to deal with the dosa pan. She uses a cast iron pan. She first heats up the pan and once it gives smoke, she applies some oil with a piece of onion/potato/brinjal and turns off the heat and lets it cool down naturally. Once the pan is cool, she turns it on and then makes dosa
The first dosa might not come out well but the rest look great and turn out crispy and golden
