The good news is that you can make your own custom difficulty levels in-game. So you can tweak allowing the nice quality of life features with more restricted payouts, bonuses, insurance co-pay, etc. I'd definitely recommend making something custom for whatever is the next series is.

If the bugs are fixed. You could do a career with multiplayer. Have either a permanent fire/conductor/engineer or rotate it out to match people's schedules.

I've also had that problem with jobs not spawning, it's the multiplayer mod. Gotta check if its on, maybe enable and disable it. This fixed it for me.
