Switzerland is well known for its chocolates, cheese, and gold but this fritter or oftentimes mistaken for hashbrowns or tortillas is a well-loved side dish. Rösti, a Swiss national dish that is originally a farmers’ breakfast from German-speaking Switzerland are made with coarsely grated potato, either parboiled or raw and depending on the frying technique, oil, butter, cheese, or another fat like ghee may be added (and usually salt and pepper).
