After watching numerous paella videos and making paella many times, it is clear that there is no such thing as an authentic or traditional paella. Every family, chef or home cook makes it different. Some paellas are better than others because of the style, steps or progression of adding ingredients to the pan. One tip is if you can't find Spanish/Bomba rice, use medium grain rice-never short grain and never stir the rice after you initially spread the rice around in the boiling chicken stock or it will get gummy. There are many other tips but you must study, practice and learn them on your own. It's well worth

Maybe add subtitles or turn down the pan flute when editing future videos

At 2:20 "...and freshly made tomato." How does one make a tomato?

I have used parboiled rice which is sold partially cooked and the Paella is great with loose grains. If you like it softer then add more water.

After cooking, they discuss confusedly about the cooking process. At 4:17, ear-bursting music returns.

I love the music of this video. So cute. I wouldn't cook my paella that way. I actually (by accident) like my seafood paella like jambalaya where it is moist but with burn bottoms. Also, may I just say la mujer es hermosa. I like her husky voice.

Youtube is jammed with gringos and even Chinese claining to be paella experts. It's a pity that no Spaniard with good English skills posts a decent paella video with quiet music (or none), showing his / her face in front of the camera, lapel mic, and subtitles of the basic ingredients and step. I think I would pay for that.

I feel as if I had eaten the wrong thing in Spain for my whole life. I never ate a paella like that. Not sure if I would like though. There's a difference between socarrat and dried burned rice. What I saw was two dried burnt rice dishes. Anyways, I prefer my smoothie and crispy paella my granny used to cook, without any tradition !🤣😂🤣😂🤣😂🤣😂🤣😂
