Today I am going to make some instant pumpkin spice latte. The general technique applies to any type of coffee if PSLs are your jam, but this powder is freekin amazing, and I intend on not only using it to make PSLs after pumpkin season is over but also using it to incorporate into ice cream and other fun stuff all throughout the year. This video was thanks to harvest right who were nice enough to send me a freeze-dryer to experiment with. Honestly, this video may be a reason to get one, however, even if you can’t get one, this video is gonna be fun, so let's get into it.

Pumpkin Spice Mixture:

1 - 2-3 inch (~5 cm) stick of cinnamon
2-3 peppercorns
2-3 cloves
2 tsp. ground ginger
2 tsp. nutmeg
1 1/2 tsp. ground allspice (optional)

Pumpkin Spice Latte:
1/2 cup (115 g) of pumpkin (canned or roasted)
8 shots of espresso
2-4 tablespoons of sugar
2 teaspoons of the pumpkin spice mixture
1 quart (1 L) of milk

I love the idea of freeze-drying all the things, but a $2, 195 freeze dryer is a lot more than “the company gave me one.”

Thats so cool, but could you have freeze dried the first try again to draw out any moisture and it would have been saved?

Could a failed batch like that first one just be ran thru the freeze dryer again to remove the moisture from the humidity?

This look fabulous but considering freeze dryers cost nearly 3, 000 dollars....I'll have to pass for now. That being said, combine this with a mylar vacuum bag system and you can end up storing stuff for years if not decades which is pretty awesome. I'll have to start saving up my pennies :)
