Burgers in the Anova Precision Oven!

Today, we're making burgers! I used the Anova Precision Oven to proof and bake the burger buns and sous vide the burgers for a perfect cook!

Anova Precision Oven Proof Settings:
- Quick Start "Proof" Mode
- Sous Video Mode: Off
- Temp: 77F (25C)
- Steam 60%
- Heat: Rear

Anova Precision Oven Bake Settings:
- Quick Start "Bake" Mode
- Sous Vide Mode: Off
- Temp: 375F (190C)
- Steam: Off
- Heat: Top, Bottom
- Fan: Off (recommended so top of buns don't get dark so quickly)

Anova Precision Oven Sous Vide Settings:
- "Custom Cook" Mode
- Sous Vide Mode: On
- Temp: 135F (57C)
- Steam: 100%
- Heat: Rear
- Fan: High (Fan is locked to High when Steam or Rear heat source are selected)

Burger Sauce Recipe:

Ingredients:
- 1/4 Cup Greek Yogurt or Mayonnaise
- 2 tsp Yellow Mustard
- 1 Tbsp Ketchup
- Pinch of salt and pepper
- 1/2 tsp Sugar
- 1/4 tsp Garlic Powder
- 1 Diced pickle spear
- 1 Tbsp Pickle Juice

Instructions:
1. Stir all of the ingredients together! The sauce is best when you let it sit for a few hours or overnight in the fridge to let the flavors meld.

Okay, please forgive me as I'm a product of the Chicago Public School system. How long from start to finish did it take you to cook two burgers?

Don't use steam to proof in the APO if you care about the temperature. Steam requires running the fan, which creates heat from friction, so you will not be able to maintain that 77°F temperature (as we can see in your video). It can add up to 10°F over time. Just cover the bowl with Saran wrap and don't run steam/fan.
