I have no idea if I mentioned that, but I’ve b en preaching it to anyone that will listen for decades. My dad did eggs like that with the steamed top. I’ve told so many people, and have permanently changed several people on how they make eggs. Including two chefs I know that now do that at home. It’s the perfect method.

Which pans are you using to get them to sit on top of each other like that. May be blind, but don't remember you using it like that. typically see you balancing the plate on top and it slides around

Steam with the lid on is the best way to cook eggs

If you want runner pink eggs cook them till the white is mostly cooked then put the water in to steam and they only take about 60-90 seconds to cook the top! Once you get it right the yellow will be completely runny and the white totally cooked! Pink eggs are my favorite!
