Perfect Holiday Savory Tarts / Vegan Puff Pastry Appetizers

Looking for something easy, fun & delicious for your holiday table? These puff pastries are so fun and simple to make! They make great finger foods or appetizers!
Im making two different flavors here, mushroom, potato & thyme + heirloom tomato, onion, cashew cream cheese & rosemary! Feel free to create your own toppings & dont forget to tag us so we can see your recreations! :)
Here's what you'll need .
1 or 2 packages of puff pastry dough, the small squares work great here
Mushroom Potato Tarts
- King Oyster Mushrooms
- Russet or your choice of Potatoes
- Fresh or Dried Thyme
Heirloom Tomato Tarts
- Heirloom Tomatoes , variety
- Red Onions
- Fresh or Dried Rosemary
VEGAN CASHEW CREAM CHEESE
- 2 cups raw Cashews
- 1 tablespoon Nutritional Yeast
- 1 small garlic clove
- 1 tsp Sea Salt
- 1/2 tsp Black Pepper
- Juice of 1 Lemon
- Start with 1 tablespoon Almond Milk (I ended up using about 1/3 cup)
Blend all ingredients of Cashew Cream Cheese using a high speed blender. Add Almond Milk 1 tablespoon at a time until mixture is smooth and creamy.
Saute Mushrooms with avocado oil until brown & add sea salt. Add to a bowl & set aside to cool. Add sliced potatoes thinly into the same pan with about 1 cup of water, close the lid & cook potatoes for about 5 min until soft. Add potatoes to a bowl and set aside to cool.
While Potatoes are cooking you can sliced the heirloom tomatoes & red onions.
Begin to assemble by following the instructions in the video :)
Bake at 375º F for about 25-35 min until puff pastry is browned.
