THE BEST QUINOA PATTIES RECIPE

This is the best quinoa patties/cakes recipe! The recipe is combination of what they have at Whole Foods plus a few extra goodies :)
If you are vegan, you can skip the eggs and the yogurt but make sure to drain well the spinach.
If you are on a gluten free diet, you can skip the bread crumbs.
The quinoa patties/cakes are baked in the oven so there is no frying at all (which makes them even healthier :)
You can also use these quinoa patties/cakes to make veggie burgers.
Quinoa Patties/Cakes Recipe Ingredients:
In a large mixing bowl add:
2 1/2 cups of cooked quinoa
2 cups of cooked spinach (well drained)
2 cups of shredded carrots
2 cups of shredded zucchini
1/2 cup of chopped parsley
1 cup of chopped dill
1 chopped yellow onion
2 cloves of minced garlic
1 tbsp of fresh lemon juice
2 eggs
1 tbsp of olive oil
1 tbsp of tahini
4 tbsp of Greek yogurt
1/2 cup of Panko bread crumbs
1 tsp of salt
1 tsp of black pepper
1 tsp of baking soda
Mix everything well together and form your quinoa patties/cakes
Arrange in a baking tray and bake at 400 degrees for 30 minutes. Then switch the oven to broil and broil on "HI" for 10 minutes.
