Easy Protein Packed Quinoa Patties

Quinoa has 8 grams of protein per 1 cup cooked! The fiber in quinoa can also help with cholesterol and blood sugar levels, lowering your risk of diabetes and heart disease. Quinoa is also rich in antioxidants, which makes this quinoa patty recipe great for any meal! This is a perfect meal idea for getting vegan protein.
Makes 8-9 patties
* 1/2 cup dry quinoa, cooked with veggie broth
* 2 cups kale, ribs removed, chopped into bite sized pieces, rinsed
* 1/4 cup vegetable broth
* 2 Tablespoons avocado oil or canola oil
* 2 cloves garlic, minced
* 1/2 cup onion, diced
* 3 egg subtitutes like Neat Egg
* 1/2 cup Panko bread crumbs
* 1/4 cup nutritional yeast
DIRECTIONS
1. Sautee onion and garlic for a few minutes and then add kale until softened
2. Add sautéed kale to a bowl with cooked, cooked quinoa, add in spices, bread crumbs, egg substitute
3. Mix by hand until dough forms , use 1/4 cup to portion and make burger style patties, pan fry on each side until crisp
