How to make lemony rice - it’s nice!
Basmati rice (washed)
Fresh lemons halved
Mustard seeds
Vegetable stock
Salt
Use equal parts rice to vegetable stock. Add all the ingredients to a pot with a lid and bring to a boil. Once boiling place the lid on top and turn the heat down to the lowest setting and time 15 - 20 mins. Once the liquid has absorbed fluff the rice with a fork and steam with the lid on for another 5 minutes. Lovely fluffy rice.
The steam and evaporation method is our favourite for cooking rice as it absorbs all the flavour. The mustard seeds soften and give little soft pops of texture throughout.
