The Reason for Docking in Baking

I picked up a lot of baking from the generations before me. When my grandmother and aunt taught me to recipes, I would ask “why” a lot. The answer has always just been “because that’s how you make THIS thing, ” leaving me unsatisfied and questioning why I have to follow the rules. Your channel has been filling in so much for me. Thank you for this.

to anyone curious about this, please be SPECIFIC when googling docking for baking, because it can mean something _very_ different.

Edit: 1 year later, I dunno what I was cooking with this comment, tbh. No normal person is ever gonna get that kind of docking as their first search result.

Also, worthwhile noting is, that the top sheet pan gives direct contact heat to the dough from the top. That leads to a more even bake.
