I make all my pot pies in my cast iron skillet I make a double pie crust recipe and then roll it out into a large single round but a touch thicker than I would for a standard pie. You then line the skillet with the pie crust centered with the edges falling over the sides. Fill the pie crust with your meat/gravy and then fold the edges over pulling to the center creating pastry pleats that drape over each other. Bake until dark golden brown. The hole in the center will let out the steam and the cast iron will prevent any soggy bottoms but the pleats will create a cooked but underdone chewy pastry bits.

I know it sounds weird but it is how my mom made them and to me the folded bits are the best part. We always had pot roast pot pie the next night with the left over Sunday roast with gravy and veggies. All us kids loved pot roast but we always held back from getting seconds so we could have huge slices of potpie the next night.

“Wholesome” “good for you” lol. It’s delicious but very high calorie and fat content due to the sauce and pastry.
