Pancakes

1 1/2 Cups flour
4 tsp Baking Powder
1/2 tsp Salt
2 Tbsp Sugar
1 Egg
1 1/4 Cups Milk
1/4 Cup Melted Butter
1/2 tsp Vanilla Extract

Apple Topping

1 tablespoons butter
2 apples, peeled, cored and finely chopped
1/4 cup brown sugar
cinnamon
1/8 cup water
1/4 tbsp water
1/4 tablespoon cornstarch

Directions:

Apple Topping
1. In a small saucepan melt butter. Add apples, brown sugar, cinnamon and water. Stir to combine.
2. In a small bowl, combine cornstarch and tablespoon of water and pour into apple mixture. Stir to combine and cook until soft (about 10-15).
3. Serve pancakes topped with apple topping.

Pancakes
Dry:
1. In a large bowl add the flour, baking powder, salt and sugar.
2. Use a whisk ingredients together. Set to the side.

Wet:
1. In a smaller bowl put in the egg. Pour in the milk and vanilla extract.
2. Melt the butter in the microwave and add to the bowl.
3. Use a fork or whisk to mix the ingredients together until well combined.

Mixing and cooking:
1. Make a well in the dry ingredients and pour in the wet.
2. Fold the batter together with a wooden spoon until there is no longer any dry flour. There will be a few small lumps in the batter, this is perfectly okay. Make sure to not over mix the batter as this will cause your pancakes to be rubbery and tough.
3. Heat up the frypan over medium low heat. When the pan is hot add oil or butter.
4. Measure out 1/4 cup of the pancake batter and pour it into the pan. Let it spread on its own.
5. Cook the pancake for 2-3 minutes or until the edges are set.
6. Use a spatula to flip the pancake over and cook for a further 2-3 minutes.
7. Repeat with the rest of the batter.
