So True. Re Cloud/SaaS. Newer products can be feature poor and technology rich. Older products that are still around after 20+ years are often feature rich and may or may not be technology poor.
Assessing product with decision weighting balanced out to features/functionality; proven upgrade path; technology platform; support/communication is wiser.
Technology platform is one (albeit important) element in the selection process.

Yes true, cloud and saas are overrated and I am completely agree .. we were early adopters and endup with high annual hidden charges..

As far as I know predictive analytics are based on a machine learning algorithm. So I think they should be in the same category. Your CRM example is valid for a good use case for predictive analytics. I think because the CRM software ensure to have the proper amount and quality of data for the algorithm. That is why it can work. I am familiar with the average data quality of a manufacturing company. I am not surprised that ML and AI will not deliver the promised benefits at most of the cases.
