How would you decompose a function from a graph? I mean you only have data points for h dependent on x. But h depends on another function f, i.e., h(f(x)) and you want to know the shape of the function f(x). Is there a way to do this?

In the second example h(x)=(f o g)(x), couldn't f(x)=sqrt(x-1) and g(x)=5x?

Every operation in a function is a potential function; Use the order of operations to analyze and order potential functions and only decompose into the amount of functions given by the form of the question. Arrange the functions generated from the order of operations analysis in order such that the 1st operation matches the innermost function and the last operation matches the outermost function of the composite function.
