How to Measure Ingredients The Right Way for Baking

When following a recipe it is always best to measure your ingredients by weight (especially when baking), but many recipes use cups, tablespoons, and teaspoons. Here are some guidelines to help you cook just like the recipe-writers intended.

A cup of flour should weigh 4.25 ounces. If you don't have a scale, here is how you make sure you get as close as possible. It's all about air.

Should I pack brown sugar? Should I shift cocoa powder? How much is a generous pinch?

I'm a pastry chef and this is all true but I never trust a baking recipe that uses cups and teaspoons. I wish more people would scale their recipes! It's so much easier!

I'm not quite sure, but I think most of Europe and European influenced countries are into weighing rather than going by volume, especially when it comes to baking. And it isn't just dry ingredients that go on the scale. Yogurt, cream cheese, butter and whatever else is measured by weight.
