Inari Sushi (Inarizushi)

Inari Sushi with a rainbow of toppings! If you’ve never had inarizushi, it’s made of sushi rice stuffed in fried tofu pouches or aburaage.
Recently a lot cafes are making them with fun fillings on top so I thought I’d try it! I topped them with:
- my spicy tofu “tuna” filling
- seasoned cucumbers
- seaweed salad
- marinated avocado
- torched corn salad
Making inarizushi is pretty straightforward, but let me know if I should throw the recipe up on the blog :)
