RECIPE

Pierce the eggplant a few times to vent. Grill the surface with low flame (I forgot to turn down the heat in the video). Turn the eggplant and grill evenly.

Grill until the whole eggplant is soft. Cut open while hot and let it cool down.

Peel and remove the skin off. Cut into your preferred size and marinate with salt and olive oil.
I recommend a simple seasoning for the Yaki Nasu.

Plating style example:
Carrot purée
Yaki Nasu
Consommé jelly
Sour cream
Salmon caviar
Micro Herb
Olive oil
