What's the best way to repair one of these chips? I feel like whetstone sharpening is more for refining, and not to grind out chips?

If you run the tip of your fingernail down the edge of the knife you'll be able to feel the Chip's, if that doesn't float your boat you can always look at the edge underneath the light.
