I’m the same way with meat. You should get a digital thermometer! I always use it now when I cook any kind of meat to let me know when it’s done and it hasn’t let me down yet!

I also have this fear of like getting food poisoning from under cooked chicken. A great tip: when you feel your chicken is a bit cooked use a knife to cut it from the middle and when you're doing that see if the chicken is cooked if it is take it off the stove if not let it cook more. This really made a difference for me
