HOW TO TEMPER CHOCOLATE #shorts

Without thermometers, with the seeding method! #shorts

Use:
Chocolate (duh)

Chop up chocolate bars. Reserve 1/3 of the mass for seeding later.
Bring water to a simmer and start a double boiler/water bath. Let 2/3 of the chocolate melt without stirring. Just let it sit! And make sure not to let any water into the bowl, or else it will seize.
When it's melted and shiny, remove from heat. Add in the remaining third of chocolate and combine. That's basically it.
