As a spanish guy I've to say that you tried the typical touristic places. You should try to travel to the northern part of Spain (Logroño, San Sebastian, Pamplona, Asturias), where you are gonna eat even better and more traditional spanish food. Also Barcelona for mediterranean food, but avoiding at all cost the most touristic places.

As an Argentinian, now living in Madrid, I thought I knew traditional Spanish food, but when I moved to Madrid, I realised that this was not the case and that Spanish food is as wide and perhaps even better than Italian or French food.
The difference is that since there are many descendants of Italian and French immigrants (and not so many Spaniards) in the USA, these cuisines enjoy a greater diffusion through the media and American movies and series.
But it is good that you are able to discover and appreciate Spanish cuisine. I think it is the best in the world.

As a Spaniard I'm glad you enjoyed Spain and our food.

As half Spanish half German, I would say Spanish cuisine is the best one in the world.
I was born and grew up -and live, in Spain. This is nice country full of great people, and awesome food :)

MESON is not a "museum", it is kind of traditional restaurant. The name comes from french "maison", and it means "house". So it is like a name for the ancient taberns or houses where travellers could stop, have a rest and eat something. In Spain, you find the more frequently in northern Spain.

People around the world tend to not add as much sugar into deserts as people are used to in the North America. As someone from the Old World who now lives in Canada, I find it hard to even eat deserts there, cause everything is too sweet. It’s interesting that Guga experiences the opposite in Europe

Sometimes I feel that the Spanish cuisine does not get enough hype, im glad you gave it the hype it deserves!!!

Spanish here, I suscribe, I love your energy and how respectfully and joyfully you treat food. I want to recommend to you going through other parts of Spain that aren't that touristic and trying the real thing, I mean, each part of spain has its own cuisine and it is even curious for us to discover new dishes from our own country. Cordoba and Granada are lovely, pretty and food is crazy delicious.

And if you want to enjoy Spanish gastronomy, don't just visit Madrid. Visit Galicia and Asturias for the seafood and the "cachopo" or the "chuletón". Extremadura for the best "Jamón Ibérico", Andalusia for fish among other things... and the entire Mediterranean coast to try good "Paellas" "alliolis" "Escudellas" "canelons", etc... A gastronomic tour of the peninsula, it can't take you less than a couple of months... xD

As another spanish guy, shout out to that pronunciation!!!! It's so beautiful to see this kind of honest appreciation for the culture, food and also well pronounced in order to share it the best way possible. Thanks a lot!

As a Spanish person, I'm glad you liked Madrid. If you want to eat well, be sure to go to the north of Spain as well. Galicia, Asturias Cantabria

if you come to Galicia, in Spain, you´ll gonna hallucinate with our food. I invite you to try our gastronomy based on seafood and fishes, but with very good meat raised in the Galician fields too!

As they have already commented, you have gone to touristic places to eat, and it is kind of hard to resume eating spanish food in only one day. Each autonomous community has its specialities and even provinces and villages have differences. But, being objective, the best food is found in the north of Spain. I think quality wise the best is found in Euskadi and quality-price wise in the province of Lugo. Hope you do some routes in the north of Spain soon, you won’t be disappointed

For adding a little bit of history to the “bocata de calamares”, in case anyone had thought why fish is in a typical dish of a place with no sea. When they were fished in the shore and shipped to madrid, which is in the center of Spain, they weren’t already fresh anymore, so for making it harder for everyone to notice it, they would batter and fry them. Obviously this has changed a lot with refrigerated trucks and it’s not (always) made for this reason any more

The good thing about spain is that the gastronomy changes abruptly from north to south or from East to West. ¡If I were you I would definitely travel to castilla la mancha and give it a try!

Spanish food is delicious. I went to Barcelona a few years ago and it was awesome, & highly recommend the city and it's a lovely country to visit. I had the Chorizos & potato too at a bar next to our hotel and it was so delicious. I've had chorizo here in the UK and it's just not the same. I wouldn't mind going back and probably will one day as it's not that expensive of a holiday from here (I just have other travelling plans).
