Avocado Tomatillo Salsa Recipe

Avocado Tomatillo Salsa💃Serve this on the Carnitas from my last reel! Recipe Below👇🏼
INGREDIENTS:
- 7-8 large tomatillos (washed)
- 1/2 white onion
- 2 cloves garlic
- 1/2 tbsp salt
- 1 jalapeño
- 1/2 bunch cilantro (use stems too)
- 1/4 cup olive or avocado oil (optional)
- 2 avocados (save seeds)
- 1 lime (can do 2 if you like)
METHOD:
1) Combine first 7 ingredients in a blender and blend. It you want to be extra, roast your tomatillos, jalapeño, garlic and onion first for 20 minutes on 400°F and let cool before adding to the blender with the rest of your ingredients.
2) Add your avocado into blender along with the juice of 1-2 limes and give it a quick 2-3 second blend — don’t overdo it.
Major 🔑: Put your avocado seeds into the bowl you’ll eventually be pouring your salsa into. Storing the salsa with the seeds in it helps it to not brown due to the oxidation of the avocado in the salsa. Learned this trick in Oaxaca 🇲🇽 from a woman running a street cart with some of the best salsa I’ve ever had.
3) Pour your salsa over the seeds in your bowl and enjoy with chips or on some tacos like the Carnitas recipe I shared in my precious reel! 🔥
