Steak Teriyaki

1/4 cup sake, plus more to deglaze
1/4 cup mirin
1/4 cup soy sauce
1 tablespoon sugar
2 thick steaks, like a sirloin, coulotte, or sirloin cap, patted dry
kosher salt
neutral oil or ghee
flaky salt

Place a cast-iron skillet over high heat to preheat.

Combine the sake, soy, mirin and soy sauce and stir to combine. Season the steaks well with salt, then lightly oil the pan and sear the steaks until they are well-browned on all sides but still quite rare.

Set the steaks aside, then deglaze the pan with a splash of sake. Add the teriyaki sauce and bring it to a simmer. Allow it to simmer for about 2 minutes, then add the steaks back to the pan and glaze them, turning frequently, until they are cooked to your liking.

Remove the steaks and allow them to rest briefly and continue to reduce the sauce for about 30 seconds.

Slice the steaks, then plate them. Garnish with flaky salt and drizzle with remaining teriyaki.

Can confirm that the sauce becomes toffee if the leftovers sit in a too warm pan.
