When you go out for really good sushi, it's like you're eating a work of art. Not all sushi restaurants cater to the omakase only crowd. Let's be real nobody in here goes to masa, morimoto, or nobu on a weekly. Let alone monthly. Most people don't even appreciate fish and can't even tell how good it's suppose to taste. So for the casual person that doesn't want to drop large amounts of money and wants to enjoy the wonderful art of sushi, they have an option too. A lot of sushi restaurants cater to all crowds of beginners, novices, and pros. Even for me being a sushi chef of 5 years, I'm not a snob like this video is pressing everyone to be. You eat what you're in the mood for and you have the ability to find the option you want. Everyone should just enjoy sushi as much as I love making it for people.

Show up 2 hours before you plan to eat and ask your waiter all the questions they don’t know the answer to so you really piss them off before they go in the back with your food.

This is actually a common misconception, as a number of fish need to be "aged" for a period in order to become tender and more flavorful. Things like shellfish and some white fleshed fish sure, but stuff like some tunas or octopus needs to be aged, marinated, or tenderized in some manner before preparation.

As a sushi chef, most TUNA are age a few days and majority of all if not all salmon should be frozen first.

Surimi varies widely in cost and quality. The Asian grocery I go to has kani kama ranging from $7 to $40, and the difference is tremendous. Dismissing surimi as "fake crab" ignores what could surimi can and should be. It's not just a "cheap" substitute for crab, and some kani kama is as expensive as crab. Telling people not to order kani kama because it's "fake" is pretty silly. It's a staple of many Japanese salads. My sunomono has high quality kani kama in it, and it's exactly the way it's supposed to be. Crab would be totally wrong for that, and many other Japanese dishes.

A lot of top sushi chefs prefer a couple days of deep freeze for the fish they use, some up to a week. Freshest isn’t always best.

Nothing raised my hackles more than the cut-scene with the patrons "fighting" with the chopsticks. Nothing in this video was more egregious than that scene.

Some fish needs to be aged. Most fish also needs to be frozen at low temperature and thawed in order to kill parasites. What this video says about showing off fresh fish is inaccurate.

"Ask your server if the seaweed was sustainably harvested". Yeah right... I'd get kicked out from asking all the questions she says to ask. What does a server know? They know the menu if you're lucky. Oh, and she says not to use soy? This is a joke...
