Chitin sounds like Chitterling, which is the intestines that people eat. Since the intestines can handle stomach acid heat, no wonder the component is called that.

Nah I have overcooked them I loved sautéed mushrooms I have crispy Kittery them at 15 minutes

Dude, Learn how to properly pronunce the words you're reading. Chitin does not have a "ch" sound as in "cheese, " but it rather makes a "k" sound so the word mimics "kite'-in."
