Why are you recording in stereo? It is best to record a voice-over in mono. The main reason is that you don't need stereo information for something like a single voice. The mic is recording close to the source, so it doesn't add anything to it by having it recorded in a stereo field. Stereo it s for singers with an instrument for example.

The double clicker thing is a good idea. I just started recording a chapter book for my kids, and I was just thinking about what to do when I mess up. I was just going to let the mistakes go. 😂
