Recipe Fish Croquettes. Homemade crunchy croquette filled with a fish stew.
For the fish croquettes we use bakkeljauw, salted and dried codfish.
I buy my fish in Amsterdam Southeast. On the market at the Anton
de Kom Square or the always charming and lively Shopperhal in the Amsterdamse Poort.
But you can also add saithe fillet, pangasius and tilapia and delicious shrimp. This recipe is the basis for a fish stew, for our croquettes.
Fish Croquettes ingredients
400 grams codfish (bakkeljauw - Dutch)
400 ml. water 4 gelatine leaves
60 grams of flour, 60 grams butter
2 tomatoes, 2 tablespoons tomato paste
1 onion, 1 clove garlic, 1 teaspoon white pepper
1 Tablespoon chopped celery, 1 teaspoon lemon
juice, 5 tablespoons sunflower oil, 2 eggs,
breadcrumbs.
