The other option is to do a par bake (partial bake). Cook the dough halfway through. Add some sauce on top to prevent the dough from puffing up too much. Then, pull it out, and add a little more sauce and all your toppings. Put it back in the oven and finish cooking.

Was just looking at the two recipes
For the Neapolitan version you use 375ml water to 500 flour. Isn't that also 75%. Should i scale a little bit?
