The older ones had more of an outline and bolder with more extreme color variations, and the newer ones are more pastel, softer, and have more gradients

I honestly didn't notice the changes until you pointed it out in the video. The older textures seem more rough. The new ones are much more refined, more pleasant to look at

I remember when I first played with the new textures I thought they were the worst update and missed the old textures. But now I like the new textures and still miss the old textures.

I never played the older versions of the game long enough to become nostalgic, so I can say, almost completely unbiased, that I prefer most of the older textures. I have no clue what it is about them, but whoever made the old textures just absolutely nailed the "Minecraft" feel that some of the new textures don't really hit.
Edit: so just to be clear, it was actually quite close. I mostly prefer the older textures of things like the God Apple, all the ores, and a lot of plants/food. Other stuff has gotten a significant upgrade, so while I think many of the older textures are good, many aren't exactly missed. Would love a texture pack with the best of both worlds.

When mojang changed the texture I was like “something seems different but I don’t know why” and now I realized

For quite a long time I basically despised the new textures, always preferring the old ones to them. But now, after so many years, looking back at them (the old ones), I can't unsee how unfinished and "cheap" they looked. Still pretty nostalgic, though, but I don't miss them.
