🍫For sourdough starter:

25 g of sourdough
25 g of water
25 g of wheat flour

🍫For dough:

315 g wheat flour
35 g whole grain flour🌾 (wheat or rye)
235 g water💦
70 g sourdough starter 🫙
7 g salt🧂
20 g of cocoa powder
60 g of dark chocolate🍫
20 g of chopped hazelnuts🌰
20 g of raw honey🍯or brown sugar

🍫🍫🍫

1. Water+ flour + sourdough starter - mix. Rest 30minutes.

2. Salt+extra water- mix. Rest 30 minutes.

3. 3 rounds of coild fold every 30-40 minutes.

4. 30 minutes rest

5. Shaping the dough

6. Rest in fridge overnight

7. Next morning scoring

8. 20 minutes Baking with lid on 250°C (480°F)
15 minutes baking with lid off 200°C(400°F)

9. Cooling for about an hour .

10. Enjoying freshly baked bread 🍞❤️
