Sourdough chocolate orange babka star with skor chunks
If you enjoy Terry’s chocolate orange… this is like the babka version. It was made delightfully soft with the addition of the sweet stiff sourdough starter. I love that the stiff starter imparts no sourness to the dough. I had this fermenting in my fridge for 72hrs and in spite of this, I could detect no sourness in the baked dough! Tag me if you try it! Note: this is a LARGE babka star (serves 16!), you could easily make 2 stars from this dough!
Sweet stiff starter
50g unfed 100% hydrationsourdough starter
66g water
120g flour
20g sugar
Dough
130g water
130g milk
125 sugar
2 eggs
8g salt
All sweet stiff starter
600g flour
100g softened butter
Chocolate layer
200g chocolate chunks
50g butter
Zest 1 orange
50g icing sugar
150g skor nibs
1. The night before mixing dough, combine sweet stiff starter ingredients. Cover and let rise overnight at room temperature.
2. Mix all dough ingredients together except butter in the bowl of a stand mixer (including all of the sweet stiff starter).
3. Mix dough on low in stand mixer until fully combined. Add softened butter in spoonfuls until full incorporated. Mix on low for 20-30 mins. Cover and proof in warm environment for 8-10hrs or until doubled. Place in fridge for overnight proof.
4. The next morning, melt chocolate chunks and butter in microwave (or over double boiler). Stir until fully combined and then add orange zest and icing sugar. Mix until fully combined.
5. Divide dough in 3. Roll out each portion into 18”-20” rounds. Layer as follows: dough, chocolate spread, Skor nibs, dough, chocolate spread, Skor nibs, dough. Make 16 cuts from the outside to the centre (do not cut all the way to the middle). Twist two segments together to make a point of a star. Keep doing this until you have an 8-pointed star. Proof in warm environment for 4-5hrs or until poufy.
6. Preheat oven to 375F and bake for 25-30 mins (or until internal temp reads 195F).
7. Cool on wire rack for 30 mins.
