This loaf is made using chocolate levain/starter and melted chocolate in the main dough. I like this method as it adds flavour to the dough, but the melted chocolate might be tricky to incorporate. To overcome this, make sure your dough is at optimal temperature before the chocolate is added. And it is best done in a warm kitchen, otherwise the dough can get quite stiff and may require longer fermentation time.
If using melted chocolate, you can extend the bulk to at least double the dough, before pre-shaping. Since it contains real chocolate, the dough will get stiff in the fridge and may not rise as much as usual (or may need more time to do so).
For extra sweetness and chocolate taste, I’ve added white and dark chocolate chips. I find adding chips is better than chopped chocolate, as they don’t melt in the dough. I’ve added them at the start of the bulk, but you can add them towards the end, during lamination.

Below is my process if you want to try it.

Makes 2 loaves

Chocolate levain/starter
18g starter
45g strong flour
10g cocoa powder
55g water
5g honey

Dough
120g chocolate levain
440g strong flour
160g wholemeal flour
440g water
70g melted dark chocolate

12g salt
10g water
20g honey

80g pistachios
40g dark chocolate chips
40g white chocolate chips

🔸Prepare levain by mixing all ingredients and leave to double in size
🔸Autolyse flour and water for 2hrs
🔸Add levain, rest 30min
🔸Add salt, honey, melted chocolate and 10g water, mix together then add pistachios and chocolate chips, rest 30min
🔸4 sets of stretch and fold, 30min apart
🔸Rest to finish bulk, the dough can double is size
🔸Pre-shape, rest 30min
🔸Shape and place in the basket, rest for 1hr then place in the fridge overnight
🔸Bake at 250C for the first 25min with lid on, then 15min at 220C with lid off
