These easy + healthy Baked Apple Oatmeal Cups make a delicious grab-and-go seasonal breakfast. Think apple pie mixed with oats baked into a yummy muffin. I also love adding them to my meal prep because then I can make them ahead and have them ready for a busy morning or I can pop them into lunch boxes as a kid-friendly afternoon snack.

BAKED APPLE OATMEAL CUPS RECIPE
3 cups old-fashioned rolled oats
1 teaspoon baking powder
1/2 teaspoon cinnamon
1 cup organic buttermilk (you can sub any milk you prefer)
2 eggs, beaten
1/2 cup applesauce (I used cinnamon applesauce)
1 large apple, chopped (1 heaping cup)
1/4 cup raisins

Preheat oven to 350ºF. Spray a 12-count muffin pan with non-stick cooking spray or coat with coconut oil and set aside.

In a large bowl combine oats, baking powder, cinnamon, buttermilk, eggs, and applesauce. Mix together until everything is well incorporated.

Add in chopped apple and raisins and gently toss until they are evenly distributed throughout the batter.

Divide batter amongst all 12 muffin cups and pop in the oven for 25-30 minutes or until they have set through and are golden brown on top.

Cool and enjoy.

*I like to store these in an airtight container and keep them in the fridge. They will last a good week stored this way.

I am shocked at how incredible these muffins turned out! After they sit in refrigerator for a day or two, it tasted like homemade Apple Buttermilk Cake!!! I Love these!!! They are good!!! I've lost 23 LBS so far over eating Healthy!!!

My mother shared this recipe with me and I've since shared it with many friends. I just made a version with mashed overripe pear instead of applesauce, flax egg, diced pear, mini choc chips, nutmeg and vanilla. They are delicious and moist! Great for a treat, and I still love the original recipe for its low sugar content. Great that these can be made gluten free without expensive specialty flours.

I made these...they were dense, naturally sweet and very much like your morning oatmeal in muffin form. I follow a vegan diet with no sugar or oil and I used almond milk, Bob's Mill egg replace and 3 stevia packets. Perfect! Thank you for the recipe.

I made them with bananas instead of applesauce and added ground flax and chia seeds and a dash of salt.

I love this recipe, I have made it several times. However, I had to make unplanned adjustments that turned out really great: While multi tasking this morning, I accidentally poured in 2 cups of milk, instead of 1, so undeterred I plopped about another cup of rolled oats, omitted the applesauce, added more cinnamon, chopped 2 smaller Granny Smith apples, added 1/4 c of craisins with the raisins. I let it sit for 10-15 minutes hoping the rolled oats would absorb more of the liquid. I also added a few broken pecans to batter. That was after discovering I had no walnuts left, I broke up pecans and added to brown sugar/cinnamon topping. I baked about 35 minutes using toothpick test. Well, with all my mistakes and adjustments it turned out really good. Muffins were fully cooked inside and pecans added different yummy flavour. So thanks for a pretty good base recipe that will allow for major mistakes!! :) :)

Made these. Nice change from wheat muffins. I was worried it would’ve stick together, but it did. I also took out cinnamon, the second time I made them, and added cranberries, lemon rind and nuts. Wonderfully refreshing. Thank you for this recipe!

I have some in the oven right now! I used fresh blackberries instead of raisins though, blackberries are a UK thing and we LOVE blackberry and apple together :)

Omg ur recipe is the best I added 1 cup oats I grounded up chill, cayenne, garlic parsley toped it off with olives & jalapeños pepers thank you so much best bread.

I made these... also made blueberry lemon. I used dried cranberries. On some I used slivered almonds. I also made some with a fresh peach and dried cherries. All are delicious. I bought a mini muffin pan and mini loaf pan to make some in.

Just made these delicious, filling, healthy muffins! I’m lactose intolerant so I used lactose free milk, turned out perfect! Next time I will turn my oven down a little and I’ll add pumpkin seeds. Thank you for sharing!

Made your oatmeal/pumpkin/dried fruit muffin cups and they were delicious. Grabbed a couple going out the door every morning. At first I was missing the "sweetness" of sugar but soon got over that. I'm making the oatmeal/apple muffins this weekend (I've eaten all of the pumpkin ones). They freeze very well and are especially nice if heated up for a few seconds. My co-worker walked into our lunchroom this week as I was just taking 2 out of the microwave after heating and she commented at how nice they smelled. I told her they taste very nice as well. Thanks for the recipes.

This is an older video but I want to thank you for these. I've just been diagnosed with Type 2 diabetes, hypertension and have high cholesterol. I didn't have raisins but these are perfect to help me get those little snacks I need without sugar or salt or oil. And they are tasty. Looks like you have tons of recipes that will help me beat these conditions and have fun in my kitchen.
