In honor of Canada Day Matt from Fidel Gastros teams up with Abbey Sharp to bring you two outstanding BBQ Burger recipes and the secret to Canada's infamous Caesar.
Matt has never been one to hold back when it comes to decadent ingredients for a burger, but this Canada Day he may have actually outdone himself. Matt has opted to not only double-stack his patties but use pork instead of the more traditional choice of beef. He also chosen to use American Cheddar, pickles, and even gone so far as to top the whole thing with a fried egg. To build this monster you need to take 16 oz. of ground pork and place it into a bowl.
The next step is to season the ground pork with salt, pepper, paprika, and maple syrup. After you have all that together you want to mix the contents of your bowl well and then make two burger patties. Put the meat on your grill for about 2 minutes per side, you are just looking to sear in the flavor right now. After that turn the temperature down and cook them for an additional 6 to 8 minutes, depending on how low you turned down your grill. The next thing you want to do is to lightly brush 2 thick cut slices of peameal bacon with maple syrup and throw them on grill. Once your patties have cooked on low for a bit and your peameal, or Canadian bacon, as it's also known is done place your American Cheddar on your patties, and then double stack them. Now that you have your double stack put some pickles on the top and if you so desire a fried egg as well.
Abbey has chosen a Tourtière style burger with delicious aged, maple cheddar cheese. She also uses Granny Smith Apple slices, maple caramelized onions, and a carefully crafted mix of spices. Keeping in line with her steadfast view regarding nutritious, low calorie food Abbey uses a food processor to grind mushrooms and mixes them into the ground meat. This reduces the fat and calorie intake without sacrificing texture or flavor.
To create this burger you combine 6 oz. of ground crimini mushrooms with 6 oz. of extra lean ground Canadian beef, 6 oz. of ground pork, 1 small egg white, 1/3 cup of bread crumbs, some grainy maple mustard and a spice mix inspired by "QUÉBÉCOIS TOURTIÈRE", which is actually a French Canadian meat pie featuring warm baking spices. After that combine a 1/2 tsp. of cinnamon, 1/4 tsp. of savory, a 1/2 tsp. of thyme as well as allspice, a 3/4 tsp. of salt and 1 tsp. of pepper and then mix well.
Form 8 skinny patties from the mixture and put 1 tbsp. of maple cheddar onto 4 patties then put the remaining 4 patties right on top of the ones you just put cheddar on, sealing in the cheese.
Slice up some red onions, thinner is better in case, spritz them olive oil and a bit of salt and pepper and set them aside for now. Time to get grilling. Put your burgers on the grill along with your 4 slices of Canadian bacon. Aside from the obvious celebration of Canada Day, Canadian bacon is one of Abbey's favorites because it is back cut bacon and is in fact healthier for you. Wrapping up this Canada Day BBQ Burger recipe video would only make sense if it ended in a traditional Canadian style beverage, in this particular case they have chosen the Caesar. This a drink primarily consumed in Canada and according to Abbey, who happens to be a registered dietician, the American Bloody Mary simply does not compare.
Abbey prefers the brand Crazy Uncle for their Uber Caesar mix. There are a myriad of reasons for her preference, but as you can imagine, it's all about the ingredients. Not only is the mix created by real mixologists, it uses real tomatoes, real lemon juice, aged hot sauce, Worcestershire, and a ton of spices. As you can see from the video Abbey saved enough time using the Crazy Uncle Uber Caesar that she was able to prepare an unparalleled Caesar bar complete with pepper reds, olives, celery, jerky, pickled beans, and pretty much anything else you might want to put in Caesar.
