Gregory is a veteran airline employee—one of the first pilots from when the airline began operations. He was terribly disfigured in a freak disruptive passenger fiery crash. And now, he volunteers with his airline to prevent such incidents from happening in the future.

I'm here to soften your fear,

Gregory, Gregory is a civilized Citizen, we can note that since he wears a crew suit of his size and has a nametag attached to his suit. Gregory very likely worked in Monsters Inc. but ended up changing careers since Monsters Inc. changed its policy from scaring to making laugh.
We can easily tell they have not taken off yet and that Gregory simply took him out of the plane, now let's not get ahead of ourselves, Gregory is a security guard and an ex Monsters Inc. worked who changed professions because he couldn't do what he loved anymore: Scaring people. So it is only fair to drag this rude customer by his legs and hand him over to the airport security where he can calm down and get either his vouchers or refund, if company policy allows it.
By no means did Gregory cause any harm or eat the customer, Gregory might be a monster but he ain't that type of monster.
And let's not get so far, we can clearly see the customer falls by himself, Gregory is just doing his fair and lawful duty to his employer.

I’m just imagining what Gregory does when he doesn’t need to take someone off the plane like I imagine he is just sitting down drinking coffee and playing on his phone then a stewardess comes up and tells he need to get someone off the plane and he’s just “alright scary face on.”
