Be Careful with Carrot Greens!

Carrot greens are a great indicator of freshness, BUT...

If you don't remove them, they'll continue to draw moisture from the carrots leaving them limp and shriveled. Cut the greens and top 1/2 cm off the top of the carrot to prevent them from sprouting.

Two tablespoons of extra virgin olive oil, 4 large cloves of garlic, I teaspoon of crushed red pepper, and one bunch of carrot greens.
Heat the oil on medium with the garlic and pepper flakes; cook until the oil takes on the pepper flavor, keeping the heat low to keep the flakes from turning black, add your greens and turn up the heat to saute until tender...great fiber, and they taste great!!
Also work as a fresh salad topping

And you can eat the greens! It's like two veggies for the price of one!
