Onions are one of my favorite vegetables. I put them in just about everything that I cook. I can't understand why anybody doesn't like them. I like them with potatoes, and on steak, with mushrooms. Or in soups, salads and stews.

I’ve found if you chop your onions, put them in a large Dutch oven on medium with a little bit of butter, and cover with a heavy lid and turn down to the lowest setting, you don’t have to stir your onions at all. Walk away and let them caramelize over the next few hours, they’ll come out perfect every time.

Next time you should drop your soup bones into boiling water and immediately turn off the heat. Let them sit for 15-20 minutes as the hemoglobin rises. Drain and wash the bones and return them to the pot, add cold water and bring it to a boil and there should be little to no scum to skim. A good French Onion Soup broth should be crystalline. The onions should be cooked into clarified butter until the onions are deep brown and no liquid remains. The darker the onions, the better the flavor.

Pho often uses roasted bones.

Asia browns and sears meat far less in general than European recipes because the flavour compounds produced by the Maillard reaction are also found in soy sauce and similar additives often used in Asian cooking. As a result it isn't as necessary in a lot of Asian cooking.

Vietnamese roasts bones for pho. Atleast from what ive seen from my family and other familys ive seen. But we supposedly got the method from the french

Throwing the onions in the oven and just waiting for them to smell almost burnt is so much easier than trying to perfectly caramelize them in a pan that is never the right temperature 😅

PRO TIP: You can caramélisés onions in a pressures cooker...chop em up and in the pressure cooker they go

I absolutely love your content, and you've taught me so much. Thank you for your continued effort on that. I just want to say however, that French Onion soup is a comfort food, and some people just want simple recipes. There are plenty of Asian soups/porridges that are also simplistic. Just because most Asian soups have a more complex falovour profile, doesn't mean they're better from a consumption standpoint. It's French. It's called French Onion Soup. You're supposed to bake the soup until the cheese is lightly charred after dishing it up.

Have you ever eaten a roasted onion, good people of the net? So good. Just toss it in the oven without peeling, roast it for half an hour, the cool slightly, peel, and eat it like a baked potato. Mmm.
