How to manually extract on a home espresso machine

I own the Express Impress version. But both operate the same. For manual extraction, you press and hold one cup or two cups button. While the button is held, the machine is in pre infusion mode. After releasing it, any where between 9 to 30 seconds, machine is in manual mode. You have to press the button to stop extraction. This will not affect the pre programmed output. Try it.

I used this method to just pull a really really long shot so it would be programmed to do that every time. Then technically every shot is manual, because while pulling a shot I could just pressed the 2 cup button to end it once I hit 36g on the scale.

I have this machine ( but by Sage) and can do manual extraction by holding the 1 cup button so the pre infusion starts. When I let go the button the actual extraction starts and when I hit that button again it stops.

You can just tap the button a second time to stop the flow. Nothing gets reset then.
