Aluminum is superior in every way. Stainless is just crappy Instagram trend that makes every food tasteless.

You're comparing an expensive 5mm thick aluminum pan with a cheap supermarket pan. A good stainless steel pan will be basically your aluminum pan with a thin stainless steel layer on the outside, providing structural strength with the aluminum being the heat conductive medium. And nobody would use stainless steel for cooking meat anyway.
A better comparison would be the aluminum pan and an equally priced cladded one for making some food that is actually cooked on both types of pans, or aluminum vs cast iron or carbon steel for cooking meat.

the delayed start is not true because u need to warm up the pan before put it the meat
