So many people use cottage cheese as a creamy alternative that adds more protein but I found that high-protein Greek yogurt is the best substitute. Especially with tacos and quesadillas, taste just like sour cream. But when you add some sweetness to it it taste like some sort of double cream or whipping cream.

It doesn’t scoop after being in freezer - rock solid. Better to freeze in separate smaller containers instead of one bigger one

Serve before it gets icy hard. If it is too hard let sit in the counter for a bit before scooping.

Everyone seems to scoop it out so easily. I haven’t made it yet because I’m worried about the comments that it is solid and icy😮 I’m dying to try it but don’t want to east my cottage cheese if it’s not going to be worth it.
