The main types of glue we use in our workshops are PVA (aka carpenter's glue) and hide glue. Both of these wood glues require tight mating parts in order for the glue to hold properly. For parts where there are gaps between the pieces that can't be clamped closed, epoxy is the only glue that will work.
Hide glue can be purchased in pre-made containers or can be cooked up in batches from crystals. Tom shows how he cooks up a batch of hide glue. In this form, it's applied warm, which has the advantage of setting up faster as it cools.
