Leek & Potato Soup - Pressure Canner Recipe

Join me as I make my first batch of Leek and Potato Soup for pressure canning and preserving. The recipe is super simple:

5 lbs sliced leaks
5 medium potatoes cut in 1/2" cubes
Salt and black pepper
6 cups of chicken stock

6 to 8 quart jars with rings and lids.

Please follow your canner's instructions because the process may vary.

Looks great! Did you end up with any siphoning? I remember my mom always said to cut the heat and let the pressure drop naturally to prevent that.

Try letting the canner sit and go down from pressure naturally before you take the weight off. Should help stop so much siphoning.
