Australian here. That’s exactly what we expect when we do that with Manuka. You can imagine what happens with Box Eucalyptus 😂😂😂

I live and brew in NZ and mostly use Manuka. Yeah, it does take longer to clear up. Cold crashing helps, as well as bigger batches.

A lovely old woman I used to work with brought in little individual serving packets of manuka honey and gave them out for free. Don't know if it was just placebo but i swear that stuff makes you feel amazing

The honey itself isnt very transparent, so maybe as a mead its just naturally cloudy

There’s actually a very popular alcoholic drink in Ethiopia called Tej that’s primarily made from honey. If you’re ever invited to an Ethiopian function you’ll definitely come across it!

Noooo skip the clearing agents. This looks uniquely cool. Almost like a medieval prototype.

Glad to see you were using Wild Stag mānuka honey. There's a lot of counterfeit and adulterated mānuka out there—several times more is bought than what is actually manufactured—not just in Asia but also Western countries like even the UK. So it's good to see that you were using a trusted New Zealand brand in what appears to be its original packaging and not getting ripped off (Australia also produces mānuka as the plant is native to both countries, but their honey isn't personally blessed by Gandalf so it's not as magical). Amongst other crimes, there have been incidents with unscrupulous importers who adulterate the honey and then pass it off at full price to distributors and retailers, so it pays to always look up the manufacturer's website and check that the packaging matches what you find there, as adulterers aren't really bothered to match the packaging that closely when most consumers and many retailers won't look that hard.

If you used a raw or unfiltered honey it still contains some beeswax, which could be a reason why the mead isn’t clearing up. I personally like the cloudiness and think lends to the uniqueness of the honey used and it being of your own brew.

Try using a low heat double boiler setup with the honey and allow to cool to just above room temp but while still in low viscosity state then add to help with the batch clearing. Hope this helps

some of y'all in the comments would loooove medovača. it's rakija, so very high alcohol percentage, but it has honey added to it so the taste is sweet yet still a little spicy. there's also a type of rakija with cherries and it's my favourite thing ever. it's called koketa and if anyone from the balkan region sees this i definitely recommend it!!!

The only thing I’ve ever used Manuka honey for was to help speed up the healing process after my son’s second jaw surgery, though the dr who gave it to us told us after we were done using it as “medicine” we could just eat it 😂
This kind of honey is used by hospitals bc it helps with healing and fighting off infection. The doctor who gave it to me also said that his scarring wouldn’t be as bad if I used it and she was right about that lol, the scarring is basically naught.
I ended up tasting it and it’s the best honey I’ve ever tasted so I can imagine this mead is divine
