My ex used to make shepherds pie, which involved throwing ground meat, cheese, corn and peas in a pot of mashed potatoes and served in a bowl. That my friends, is a lazy sherpherds pie.

Interesting how recipes differ from family to family and regions. We always had mixed veggies mixed in with the meat and soup, while friends family only used green beans.

The one my family did was using:

Tator tots
Monterey jack cheese
Ground beef or turkey
Cream of Mushroom soup
Onions
Ketchup
Hot sauce
Salt
Pepper
Basic spices (garlic powder, onion powder, paprika. Or just use a good season salt)
Worcestershire sauce

And we layer it in a baking dish like a lasagna. Serve with fresh green beans and corn.

I've always loved shepherd's pie and tater tot casserole. Breakfast casseroles in general are always great. Found a recipe that put bits of Pillsbury dough on top and it was brilliant!

Iowa Tater Tot casserole usually has mixed vegetables in it. Iowans are so darned healthy!😂

I always thought of this as a shepherds pie with tots instead of mash. Any potato top on a shepherds pie filling works great. We've done potatoes au gratin on the top and it's so good.
